Turkey meatloaf with feta and sun dried tomatoes


A flavorful turkey meatloaf is delicious alternative to the original beef meatloaf for those trying to stay away from the red meat. Actually, even those who are not straying from beef should try it as it truly is absolutely subsumptions. Turkey in itself does not have much flavor but the additions of garlic, parsley, feta and sun dried tomatoes bring it to another level.


Ingredients

1/2 cup bread crumbs
1/3 cup chopped fresh parsley
1/4 cup chopped marinated sun dried tomatoes
2 cloves minced garlic
2 eggs
2 Tbsp milk
1/2 cup crumbled feta cheese
1 1/2 tsp kosher salt
1 tsp ground black pepper
1 lb ground turkey.

Preheat oven to 375 degrees.
Spray 9 by 5-inch loaf pan with cooking spray.
Mix all the ingredients together in a large bowl. 
Pack the meat into the loaf pan and bake around 45 minutes or until internal temperature of the meat reaches 165 degrees.
Let rest for 5 minutes. Slice and enjoy!!
