Cauliflower Mac and Cheese


 Cauliflower is like a potato. You really can do  a ton a different things to it, every time with a completely different outcome. This recipe is just so tasty and satisfying. The creaminess and cheesiness is right on point if you are looking for a mac and cheese replacement. Hope you enjoy it as much I do!



 Ingredients 

1/2 tsp kosher salt
1 head cauliflower, cut into bite size pieces
1 cup heavy cream
2 oz cream cheese
2 tsp Dijon mustard
2 cups shredded cheddar cheese (1/2 cup for topping)
1/4 tsp black pepper
1/4 tsp garlic powder

Preheat oven to 375 degrees.
Spray 8 by 8 baking dish with vegetable spray.
Bring a pot of salted water to boil and cook cauliflower in it, about 5 minutes, drain and put into prepared baking dish.
Bring cream to simmer, and add all the rest of the ingredients, reserving 1/2 cup of cheddar for the topping. Once well combined and the cheeses are melted, remove from the heat, pour it over the cauliflower and mix it.
Top with remaining cheese and bake until bubbly (approx. 15 minutes).
