Potato stacks in muffin tin

Speaking about finger licking goodness! These potatoes are an absolute winner at any party! So delicious, so flavorful, so ... fancy looking!!
Potato is probably the most perfect vegetable, don't you agree?? The list of recipe you can make with them is endless! Today is another to add to your extensive list: potato stacks!



Ingredients
1.5 cup heavy cream
2 cloves garlic, minced
2 lb russet potatoes sliced into 1/16 thin slices
1tsp salt 
1/2 tsp pepper
Parmesan cheese for topping

Heat oven to 375 degrees. Spray muffin pan with nonstick spray.
In a sauce pan heat cream and garlic until simmer.
While the cream is heating, toss the potatoes with salt and pepper and stack them into muffin pan not going over the top.
Spoon cream over each potato stack, filling almost to the top. Sprinkle with Parmesan cheese.
Bake for 25-30 min until potatoes are fork tender and gold on top. 
Take out of the oven and let them cool for 5 minutes before serving. Run knife around the edgers to loosen each stack before using a large spoon to remove it.
