Zucchini cakes

At this time of the year many of you probably have zucchini coming out of your ears. We are hitting the zucchini season and you see them on sale everywhere. I already gave you the recipe for zucchini casserole with feta cheese but here is another thing you can make with them. Shred them, form patties and fry them! Yums!!


6 cups shredded zucchini or half zucchini, half yellow squash
1 cup breadcrumbs
1 cup shredded Parmesan
1/3 cup minced onion
1 egg
1 1/2 tsp Italian seasoning
1/2 tsp salt
1/4 tsp pepper

Butter for frying

Put shredded squash between paper towels to squeeze out all the moisture. Put it in a large bowl with the remaining ingredients except for butter. Mix it well with your hand and form 2-3 inch patties. Heat up butter in a frying pan and throw them on. Cook until done. You can serve them alone or with a side of warm marinara sauce.
