Berry Cobbler

Mmmmm, those delicious berries. This is definitely the time of the year to take advantage of the most amazingly tasting strawberries and blueberries. I made this cobbler last night and served it with ice cream. Funny enough, I completely omitted butter (not on purpose) and it turned out so good!






Ingredients

2 pints of strawberries, quartered
1 pint of blueberries
1 cup sugar, divided
1 Tbsp cornstarch
3/4 cup flour
1/4 cup milk
1 egg
1/2 tsp salt
1 tsp baking powder
1/2 tsp vanilla
6 Tbsp melted butter ( I actually didn't add any butter at all and it came out very good)


Put all the berries into a large bowl and add 1/4 cup sugar and cornstartch to them. Let them sit for 10 minutes. Meanwhile whisk egg, milk, vanilla and butter. Add flour, 3/4 cup sugar, salt and baking powder. Divide berries between 6 to 8 ramekins (depending on their size) or use a regular baking dish of your choice and put all the berries in it. Pour the batter on top of the berries and bake at 375 degrees for 25 to 35 minute or until it will the top will just start to turn golden. Serve with a scoop of delicious vanilla ice cream. Enjoy!
